Attention to details is everywhere, like in the hand-blown metallic-glass fixtures and the quarry floors lined with river pebbles, that together with the walls in vibrant colors and rustic furnishings create an inviting yet sophisticated ambiance. It takes its name from the amaranth, a highly nutritious grain that was a staple food in the diet of the ancient Aztecs. Used in their religious ceremonies, the sacred amaranth was banned by the conquering Spaniards, resulting in its near extinction in Mexico.
