Summary

The USDA Food Expos are an opportunity for food service directors (FSD)/head cooks to meet with DESE – Food & Nutrition Services (FNS) and learn more about the USDA Foods Program offered in Missouri.

Each location will consist of three sessions.
1. Cooking With Commodities:  Expo participants will get the chance to learn more about “cooking with commodities” in a session taught by Lisa Farmer from the MO Department of Health and Senior Services.  This session will teach you how to incorporate more fruits, vegetables, whole grain rich foods, and meat/meat alternates into school menus.

2. Informational Meeting/Presentation:  DESE – FNS will provide information concerning current practices for Local Education Agencies (LEAs) participating in the USDA Foods Program.  Updates affecting the ordering of USDA Foods for SY 18-19 and a look into the future of ordering USDA Foods will be shared.

3. Food Show/Processing Packet Help Session:  Processed food items offered for SY 18-19 will be available for sampling and comparison against similar approved processed end products.  While the food show is occurring, LEAs will have the opportunity to work through the annual USDA Foods Packet with DESE – FNS personnel to ensure desirable quantities of processed items for SY 18-19 are submitted.  Spreadsheets and other helpful tools will be explained for easy use.
