As a high school junior or senior interested in the field of culinary, this is an essential course in your journey toward a career-focused education where foundational skills for the food service industry are delivered in a college setting by Art Institutes school’s credentials faculty.
This course primarily centers on the basic principles of nutrition and their relationship to health. The structure, functions and, sources of nutrients, including proteins, carbohydrates, fats, vitamins, minerals, and water are covered. Current issues in nutrition are also reviewed, including dietary guidelines, energy balance, vitamin supplements, and food fads. But unlike a standard lecture-style nutrition course, your course will take place in a real, industrial kitchen where hands-on demonstrations and lab assignments will be performed to demonstrate the principles being taught.
After successfully completing this course, students will receive a Certificate of Completion and will have the opportunity, upon enrollment with any Art Institutes school, to request proficiency credit for Nutrition Science, a 4 credit course required in all culinary degrees offered including Culinary Arts, Culinary Management, Baking & Pastry, and Hospitality Food & Beverage Management.
*Students who successfully complete a course will receive a certificate of completion. The College Bound courses are non-credit bearing and do not directly transfer into our academic program offerings or the offerings of any other institution. However, as part of the course, you will have the opportunity to develop a portfolio that you are able to request proficiency credit. Proficiency credit is awarded based on the proficiency credit policy defined in an institution’s academic catalog. Check with the school you are interested in attending for exceptions and details, as not all programs are offered at all locations. Individual location participation is subject to change.
