Seine Speisekarte umfasst frische Salate, Rohkost, hausgemachte Pasta, Hauptgerichte und Desserts, die aus speziell gepflegten Beziehungen zu Landwirten und Lieferanten der Region stammen. Chefkoch Paidas begann seine Karriere in jungen Jahren, als er Gemüse zubereitete und Geschirr spülte. „Viele der Aromen, die ich bis heute verwende, waren Dinge, die meine Mutter, mein Vater und meine Großeltern zubereitet haben“, erinnert er sich.
