Named after an old mathematical theorem, it’s all about creating order out of a chaotic system. When started in 2008, there was nothing more chaotic than growing grapes at 4,500 ft in Colorado and making wine in a warehouse in an alley in a city. There are an infinite number of variables at play, decisions to be made and possible outcomes. It is the job of their team to create order out of this inherently chaotic system as they craft ridiculously good wine.

Centrally located in Denver Colorado at 1420 S. Acoma. From their home in the historic Gates Neighborhood they take an obsessive, hands-on approach to every aspect of whiskey production. It’s here where they mill the grains, combine them and cook them to create an incredibly complex sour mash. Here the mash is open-air fermented for four days, then distill it in a four plate pot/column still custom made just for us by Vendome Copper Works. From there the whiskey makes its way to full sized American White Oak barrels, where it’s aged a minimum of two years.

It all began with a special gift to the mayor of Denver, a black bear cub that came to live at City Park. Early visitors to the growing zoo enjoyed watching animals like monkeys, elk, bison and birds. With the opening of Bear Mountain in 1918 Denver Zoo became the first American institution to benefit from Carl Hagenbeck’s revolutionary zoo concept, that people should see animals at eye level in natural habitats without bars or fences. This ground-breaking exhibit features artificial rock formations produced using plaster casts from natural cliffs near Morrison, Colorado and is now on the National Register of Historic Places.
