Castalla La Hoya, dont l'histoire est la capitale de Castalla, est une large vallée en forme de T orientée vers le sud-est et prise en sandwich entre diverses formations montagneuses. Castalla occupe l'ouest et le sud-ouest de La Hoya, qui s'entrelacent comme les montagnes du Maigmo.
Différents bars et restaurants locaux sont spécialisés dans ce délicieux plat composé d'un pain plat cuit sans levure émietté en petits flocons, de grandes quantités de viande, de champignons, d'escargots ainsi que de tomates et d'oignons légèrement frits. Et aussi la « pebrella » issue de la famille du thym, une herbe aromatique qui confère au Gaspatxos son goût caractéristique.
