In August of 2016, chef Laurel Burleson launched the Ugly Apple Food Cart. She has been cooking in professional kitchens since high school and has a degree in hospitality management. After cooking for several years around Chicago and Madison, she saw how much was going to waste of this fantastic Midwestern produce. She envisioned owning a cafe that focused on delicious local produce. Hence, the Ugly Apple was born. Like the story of the Ugly Duckling, the Ugly Apple might not be bought at market but can still make a beautiful fritter. This belief, shared by Michelin-star chefs worldwide, ensures the best culinary results in every dish. In 2004, chef Daniel launched Granny’s Golden Oven across from a hospital, offering health-conscious meals that quickly gained popularity among the staff. His dedication to quality earned him a decade-long partnership with the Military, providing nutritious lunches for recruits five days a week. Eager to expand his horizons, chef Daniel ventured into fine dining, collaborating with top-tier caterers and executive chefs. He later completed his degree in culinary arts, blending tradition with modern innovation—all while staying true to his foundational principle of using the freshest ingredients.
