Hi! I’m Estelle Tracy, a chocolate sommelier with a French accent and the founder of 37 Chocolates, a chocolate education company. I’ve hosted hundreds of tastings worldwide, both in-person and online, for teams and clients who want something fun, inclusive, and memorable. From wine, beer, and tea pairings to blind tastings and global chocolate journeys, I bring people together through chocolate. My clients include Google, Deloitte, and EY, and I’m a regular speaker at major industry events like the DC Chocolate Festival, the PA Chocolate & Coffee Festival, and the Retail Confectioners Association. Dylan has an extensive history in music, including recording at the legendary East West Studios, where Elvis, The Beatles, U2, and Harry Styles also recorded. He’s recorded with Hans Zimmer’s first violinist, Dua Lipa’s cellist, and frequently performs with Cindy Lauper’s keyboard player. He has released original music on Spotify and has co-directed and starred in several music videos, shared stages with members of the off-Broadway musical STOMP, and even composed music for the documentary “The Essential Church,” which peaked at #1 in the Apple TV Documentaries category. His extensive education and experience playing music have helped him to develop a very discerning ear and musicality, and he can easily perform a bespoke set list that is individually crafted for every audience. He can arrange his own song list and create a performance that fits the mood and energy of your event, often starting with soft acoustic instrumental music and slowly increasing the energy as the night progresses. He not only comes with all needed gear but can provide lighting and a wireless mics for guests or officiants, has every performance insured, and strives to give you an absolutely stress-free booking process and seamless experience from the first phone call to the last note of the night. The Formosa first opened its doors IN LOS ANGELES in 1939: making its new debut in its 80th year. Located across from the then-Samuel Goldwyn studio, stars like Frank Sinatra, Humphrey Bogart, James Dean, and Elvis Presley would pop into the legendary Formosa Cafe regularly for dining and drinks. On any given day, patrons might have seen Ava Gardner dancing past the old, red leather booths, or John Wayne nursing a late-night scotch (he was caught making scrambled eggs in our kitchen one morning, after reportedly passing out in a booth the night before). Among the interior design restorations is the full reveal of the iconic and original red trolley car, dating back to 1904 and is confirmed to be the oldest surviving red train car in existence. Boxes of autographed celebrity photos and storage units of original memorabilia have made their way back into the Cafe.
