L'hôtel Parador de Olite occupe une partie d'un majestueux palais-château datant du XVe siècle et déclaré monument national. Stratégiquement située dans la plaine au bord de la rivière Cidacos, Olite se trouve à 5 km de Tafalla et son accès principal se fait par la route N-121. Les parties communes et certaines chambres se trouvent dans le palais-château lui-même, tandis que les autres pièces sont situées dans un bâtiment annexe.
