In August of 2016, chef Laurel Burleson launched the Ugly Apple Food Cart. She has been cooking in professional kitchens since high school and has a degree in hospitality management. After cooking for several years around Chicago and Madison, she saw how much was going to waste of this fantastic Midwestern produce. She envisioned owning a cafe that focused on delicious local produce. Hence, the Ugly Apple was born. Like the story of the Ugly Duckling, the Ugly Apple might not be bought at market but can still make a beautiful fritter. The Miller High Life Theatre consists of a 4,086-seat assembly/performance hall with a large, theatrical stage, two carpeted side halls of 6,100 and 4,000 of square feet, and a large, spectacular rotunda lobby. The performance hall has sloped seating with clear sight lines; with a flexible curtaining system, it can be reduced to more intimate settings for 2,500 or 1,300 people.
