De nieuwe Rich Grain Distilling Co. is gevestigd in een bakstenen gebouw uit 1880 in het centrum van Canton dat zorgvuldig is gerenoveerd en gerestaureerd. Alle aspecten van het productieproces worden hier met de hand en in kleine batches uitgevoerd. Lokale grondstoffen worden ontvangen en vervolgens gemalen, gepureerd, gefermenteerd, gedistilleerd (in een handgemaakte hybride pot van 300 gallon die nog steeds door David wordt gemaakt), op vat en gebotteld. De distilleerderij voert de productie van bourbon op, die geduldig rijpt in het vathuis, maar tot die tijd zijn ongegerijpte cornwhisky, witte rum en gekruide rum te koop. Bezoek de distilleerderij voor een rondleiding en proeverij!

Mississippi verbood alcohol in 1907 en werd in 1966 de laatste staat die het verbod introk. 104 jaar vooruitspoelen en twee goede heren, Austin Evans en Richard Patrick, hebben de eerste legale still van de staat ontslagen.
