Geoffrey was vroeger chef-kok bij Etain, het eerste bestemmingsrestaurant van Sir Terence Conran buiten Londen. Nu als chef-eigenaar richten hij en zijn team in de keuken zich op het leveren van moderne gerechten op basis van de beste lokale en seizoensgebonden ingrediënten. Deze eenvoudige aanpak wordt aangevuld door de spannende wijnkaart van meer dan 400 bakken. Als gevolg hiervan is The Peat Inn altijd een van de beste restaurants in Schotland, dat al meer dan 30 jaar bekend staat om het gebruik van verse Schotse producten.
