Blue Corn Cafe werd geopend op Ninth St. in juni 1997. Met een dollar en een droom gingen eigenaresse Antonio Rios en Danielle Martini-Rios op pad om het publiek een fusionachtige smaak van heel Latijns- en Zuid-Amerika te serveren. Ze wisten dat het belangrijk was om trouw te blijven aan hun afkomst en afkomst bij de beslissing welk menu en welke ingrediënten ze mee zouden nemen. Bij Blue Corn serveren we alles, van bonen in Cubaanse stijl tot authentieke handgerolde empanadas. We brengen verse bakbananen, mango's, guaves en meer binnen. Chef Antonio combineert graag de smaken van zijn geboorteland Mexico met authentieke smaken uit het hele Caribisch gebied en Zuid-Amerika. Onze missie is eenvoudige, verse biologische ingrediënten die dagelijks ter plaatse worden bereid.
