Vergeet het nooit bij alles wat je doet.” - Chef John Paidas Chef-kok John Paidas, afgestudeerd aan het Culinary Institute of America, lanceert Apropos Restaurant & Bar in The Abbey Inn & Spa in Peekskill in december 2019. Zijn menu zal bestaan uit verse salades, crudo, zelfgemaakte pasta's, hoofdgerechten en desserts, afkomstig uit speciaal gecultiveerde relaties met boeren en leveranciers in de omgeving. Chef Paidas begon zijn carrière op jonge leeftijd met het bereiden van groenten en het afwassen. „Veel van de smaken die ik tot op de dag van vandaag gebruik, waren dingen die mijn moeder, vader en grootouders zouden maken”, herinnert hij zich. Na zijn afstuderen verhuisde Paidas naar Aspen, Colorado, voor vijf jaar in de Little Nell aan de voet van Aspen Mountain, waar hij leerde wat „van boer tot bord” eigenlijk betekende. „Met onze eigen boerderij waar niet alleen producten van, maar ook melk en dieren werden gekocht, was het echt een levensveranderende ervaring om te leren waar voedsel vandaan kwam, maar ook wat er nodig was om het in het restaurant te krijgen”, zei hij. „Ik kan niet wachten om onze deuren voor jullie allemaal te openen en een maaltijd te delen die, in zijn meest simplistische aard, je doet glimlachen en dankbaar is dat je onder vrienden en familie bent.”
