Hotel d'Assezat is een herenhuis uit de Renaissance dat dateert uit de gouden eeuw van Toulouse, een tijd van grote rijkdom die werd verworven door de cultuur en handel van pastel. De kamers die te huur zijn, bevinden zich in de voormalige keukens van het gebouw, gelegen op de begane grond. Deze kamers zijn gewelfd, in baksteen ommuurd en geclassificeerd als historische monumenten.
