In August of 2016, chef Laurel Burleson launched the Ugly Apple Food Cart. She has been cooking in professional kitchens since high school and has a degree in hospitality management. After cooking for several years around Chicago and Madison, she saw how much was going to waste of this fantastic Midwestern produce. She envisioned owning a cafe that focused on delicious local produce.
Hence, the Ugly Apple was born.
Like the story of the Ugly Duckling, the Ugly Apple might not be bought at market but can still make a beautiful fritter. Yes, Hilton is committed to reducing waste across our portfolio. All of our hotels were required to remove plastic straws, stir sticks and cocktail picks in 2019, and we are currently transitioning from individual bath toiletries to full-size dispensers.
