Hi! I’m Estelle Tracy, a chocolate sommelier with a French accent and the founder of 37 Chocolates, a chocolate education company. I’ve hosted hundreds of tastings worldwide, both in-person and online, for teams and clients who want something fun, inclusive, and memorable. From wine, beer, and tea pairings to blind tastings and global chocolate journeys, I bring people together through chocolate. My clients include Google, Deloitte, and EY, and I’m a regular speaker at major industry events like the DC Chocolate Festival, the PA Chocolate & Coffee Festival, and the Retail Confectioners Association. He is able to perform wirelessly, walking around while performing, interacting with the crowd, and raising the energy of the room. Dylan has performed at a huge range of venues across the US, from intimate dinner parties to huge festivals of thousands. Dylan has an extensive history in music, including recording at the legendary East West Studios, where Elvis, The Beatles, U2, and Harry Styles also recorded. He’s recorded with Hans Zimmer’s first violinist, Dua Lipa’s cellist, and frequently performs with Cindy Lauper’s keyboard player. He has released original music on Spotify and has co-directed and starred in several music videos, shared stages with members of the off-Broadway musical STOMP, and even composed music for the documentary “The Essential Church,” which peaked at #1 in the Apple TV Documentaries category. His extensive education and experience playing music have helped him to develop a very discerning ear and musicality, and he can easily perform a bespoke set list that is individually crafted for every audience. He can arrange his own song list and create a performance that fits the mood and energy of your event, often starting with soft acoustic instrumental music and slowly increasing the energy as the night progresses. He not only comes with all needed gear but can provide lighting and a wireless mics for guests or officiants, has every performance insured, and strives to give you an absolutely stress-free booking process and seamless experience from the first phone call to the last note of the night. Against all odds, we have opened up our newest restaurant, Serafina, This little gem of a restaurant, perched on top of Nob Hill, has truly been a labor of love, as we were set to open at the end of February, and then had to do so during the ensuing pandemic....We are so excited about Serafina, which has been a concept in the making for many years for us. Serafina was Maurizio’s grandmother, and the name of her eponymous restaurant in the heart of Trastevere (Rome), where Maurizio first began making pizzas at the age of 14. She was a tough woman and wonderful chef.. an inspiration for his love of cooking then, and inspiration of how he is determined to persevere despite the difficult circumstances of today. We hope to create a warm, elegant space where neighbors and friends can come together. We have an amazing team with our partner Giuseppe Terminiello, the co-owner of Piccolo Forno with us (we also own Ideale, in North Beach as well), and Umberto Cannarsa, an accomplished and incredibly talented chef from Rome, who had his own successful restaurants there.
