Localizada no coração do centro histórico desta cidade alentejana, reconhecida como Património Mundial pela UNESCO, esta unidade hoteleira, que resulta da reabilitação do antigo Convento de São Paulo, tem como tema as fortificações militares portuguesas espalhadas pelo mundo. Usando a configuração original do edifício - que após a extinção das ordens religiosas deixou de ser um convento e funcionou como tribunal militar, quartel e casa de detenção - este hotel possui 79 quartos (incluindo sete suítes mezanino de dois andares), dois restaurantes com uma oferta gastronômica regional dedicada aos sabores locais, bar, piscina externa, spa com salas de massagem, piscina de hidromassagem, banho turco, sauna e piscina coberta e, finalmente, o claustro, de volta em verde e fixo, duas salas de reuniões e um salão de eventos que fica na área da antiga igreja, e é ideal para realizar casamentos e batizados. O Vila Galé Collection Elvas - Historic Hotel, Conference & Spa é o primeiro hotel em Portugal a ser concluído no âmbito do Revive, o programa público de concessão e recuperação do património histórico.
