A few words from the man himself… Growing up in an Italian-American household, food was always front and center in all family gatherings. I found myself in the kitchen during any family event and have fond memories watching as my mother made sauce, my grandmother made meatballs, and my aunts made cookies. As I got older it became obvious to me that my passion and future profession would be cooking in one capacity or another. I started my training with Inspiration Kitchens in Chicago, followed by stints in my uncle's hot dog stand Mandino's located in Twin Lakes, Wisconsin. Eventually, I formalized my training in some of Chicago's most beloved restaurants with names such as Publican Quality Meats, Au Cheval, Formento's, and Table Donkey and Stick. While fine-dining kitchens help sharpen my skills, my Italian/American roots were calling. Nothing made me want to make my mark on this industry quite like pizza.

Open since 1982 in Chicago's Lakeview neighborhood, Pops for Champagne is the nation's most acclaimed champagne bar and Chicago's most elegant live music club. In 2006, Pops for Champagne relocated to the historic Tree Studios on the corner of State and Ohio in the River North area where it will continue to provide visitors and Chicagoans a truly unique and memorable experience. On State Street, Pops for Champagne will offer 100 bottles of champagne and sparkling wines along with full bar service and a freshly prepared shared plate, raw bar, and dessert menu in a uniquely designed 2-level space with a street level main bar, and a lower level intimate live music club, featuring the best of Chicago's live jazz entertainment. Pops Shop, adjacent to the main bar, will be the nation's only dedicated sparkling wine and champagne retail store, selling an eclectic selection of champagnes and sparkling wines from around the world, as well as unique service and gift items. Also considered as one of the city's most unique private party/special event venue locations. Pops for Champagne on State Street continues to be Chicago's premier destination for after work and nighttime entertainment. It's where Chicago celebrates for 25 years. Hours Sunday–Friday: 3pm–2am Saturday: 1pm–2am
