Located in the heart of the vibrant Pearl District, Vaux features an all-day, seasonal, contemporary menu that highlights favorite local products. Led by Executive Chef Micheal Iles and drawing on his diverse culinary experience, the menu draws heavily from flavors and products of the Pacific Northwest. We create signature and seasonal cocktails from local producers and we also serve world-class wines from Willamette Valley and beers from our region's finest craft breweries. Vaux is located inside the Canopy Portland | Pearl District set amidst an extensive collection of fine and local art curated by neighboring Elizabeth Leach Gallery, including an expansive sculpture inspired by our own Vaux Swifts from Portland-based artist Sean Healy. Vaux boasts an outdoor patio along NW Glisan, dining room seating, and a comfortable lounge. Yes, Hilton is committed to reducing waste across our portfolio. All of our hotels were required to remove plastic straws, stir sticks and cocktail picks in 2019, and we are currently transitioning from individual bath toiletries to full-size dispensers.
